To enhance our constantly evolving menu in Moira's Restaurant, Moira creates a new dish each month.
Her September special is a Parcel of Spiced Lamb served with Mixed Organic Leaves & Yoghurt & Chive Dressing - with a Vegetarian option using a dice of Red Onion, Sweet Potato & Turnip to replace the Lamb.
Ingredients:
1 Loin of Lamb (approx. 8oz skin and fat remove)
1 Clove Garlic (crushed)
½ Teaspoon Cayenne Pepper
1 Teaspoon Ground Cumin
Seasoning
2 fl oz Cream
8 oz Cream Cheese
Spring Roll Pastry
To prepare the filling dice the lamb into 1/2 inch cubes, add the garlic & spices & fry off in a little oil. Add the cream & reduce to a sauce consistency. Allow to cool. Fold in cream cheese & refrigerate until required.
For the vegetarian option use 2 oz each of red onion, sweet potato & turnip. Dice the turnip & sweet potato, blanch lightly & refresh under cold water. Dice the onion and fry off with the garlic, add the spices & the vegetables and gently fry. Add the cream and reduce. allow to cool, fold in the cream cheese & refrigerate until required.
To cook - brush a sheet of spring roll pastry well with melted butter, place another smaller sheet in the centre (as shown) & brush it also with melted butter. Place 1 tablespoon of the filling in the centre of the pastry & fold over the pastry to form a triangle as shown on the video. Bake for 12-15 mins at 180C.
To make the dressing, mix 2 tablespoons of mayonnaise, 3 tablespoons of natural yoghurt, juice of half a lemon and some chopped chives in a bowl and refrigerate until required.

The new dish will be available in Moira's Restaurant from September 1st and all diners in Moiras on that evening will be offered this as an additional course & a glass of appropriate wine with Moira's compliments.
