The new dish will be available in Moiras Restaurant from October 6th and all diners in Moiras on that evening will be offered this as an additional course & a glass of appropriate wine with Moiras compliments.
Tartlet of Roquefort Cheese on a Redcurrant & Walnut Coulis
Filling
Ingredients
8 oz Roquefort Cheese
2 oz Chopped Walnuts
4 oz Chopped Spring Onions
Fresh Nutmeg
1 Whole Egg
2 Egg Yolks
2 fl oz cream
Seasoning
Method

Chop Roquefort Cheese & mix with spring onions, walnuts and nutmeg.

In a separate bowl, whish egg, egg yolks and cream.

Stir into the cheese mix and season lightly.

Spoon the mix into the tartlet moulds and bake in a medium oven for 15 minutes approx, until golden & risen.
Redcurrant Dressing
Ingredients
4 fl oz Olive Oil
1 fl oz Walnut Oil
1 fl oz Balsamic Vinegar
2 fl oz Lemon Juice
2 tsp Wholegrain Mustard
8 tbsp Redcurrant Jelly
2 oz Chopped Walnuts
