To enhance our constantly evolving menu in Moiras Restaurant, Moira creates a new recipe each month. A video of Moira preparing her new October dish is now  available on our website. The new dish will be available in Moiras Restaurant from October 6th and all diners in Moiras on that evening will be offered this as an additional course & a glass of appropriate wine with Moiras compliments.

Tartlet of Roquefort Cheese on a Redcurrant & Walnut Coulis

 
Filling
 
Ingredients
8 oz Roquefort Cheese
2 oz Chopped Walnuts
4 oz Chopped Spring Onions
Fresh Nutmeg
1 Whole Egg
2 Egg Yolks
2 fl oz cream
Seasoning
 
Method
  • Chop Roquefort Cheese & mix with spring onions, walnuts and nutmeg.
  • In a separate bowl, whish egg, egg yolks and cream.
  • Stir into the cheese mix and season lightly.
  • Spoon the mix into the tartlet moulds and bake in a medium oven for 15 minutes approx, until golden & risen.
 
Redcurrant Dressing
 
Ingredients
4 fl oz Olive Oil
1 fl oz Walnut Oil
1 fl oz Balsamic Vinegar
2 fl oz Lemon Juice
2 tsp Wholegrain Mustard
8 tbsp Redcurrant Jelly
2 oz Chopped Walnuts
 
Method
  • Place all ingredients into a screw-top jar, shake vigorously to combine and emulsify.
 
To Serve
  • Drizzle Redcurrant dressing around the plate
  • Place Tartlet in the centre, garnish with fresh organic lettuce leaves and flowers.

" We were looking for wedding venues and found Cromleach Lodge.

We visited and stayed there a couple of times before the wedding. Every time we visited we met the owners Christy and Moira who are very much hands on owners giving it the personal touch.

Every meal we have had has been wonderfully prepared and presented with great panache. They had no problem catering for 120 people with restaurant quality service.

We got married there in aug09 and cannot fault anything about the day, we are planning on celebrating our anniversary there.&
The setting is absolutely breathtaking and it is very serene and peaceful.

The hot tub and spa is very modern restful, and calming. It is a lovely retreat and we highly recommend avisit. "
